At EmanoN, we offer a course built on the backbone of Japanese cuisine, layered with elements of spices and fermentation. Honoring dashi, heat application, and the flow of the seasons, we have reconstructed the taco as a symbol and create expressions that traverse ingredients and techniques. We design even temperature and lingering finish, so you can enjoy it as an experience throughout the entire course rather than as a single plate.
A quiet space of exposed concrete with only six counter seats and four private rooms. At EmanoN, we design courses as a flow that layers spices and fermentation onto the framework of Japanese cuisine. Tacos are positioned as a symbol of that idea, reconstructed as a vessel to freely traverse ingredients and techniques. Fermentation gives depth to the flavors as a layer of time. Including temperature and aftertaste, it becomes a single experience. A fully reservation-only restaurant where food and space become one.
